Initially slated to open last week, Morgan Mae's Oyster House has temporarily delayed its opening at 606 N. Pinellas Ave. in Tarpon Springs until Monday, Sept. 28.

Owner Alan Blythe alongside partner Mike Murphy are bringing a hefty lineup of oysters to the sponge docks, and Creative Loafing Tampa Bay connected with Blythe to get the rundown on the menu offerings of the forthcoming restaurant.

Blythe says that diners can expect a heavy focus on oysters, obviously. “We’ll have steamed, raw, fried, grilled, as well as specialty oysters like blue cheese and Oysters Rockefeller.”

If you’re not familiar with Oysters Rockefeller, the dish consists of oysters on the half-shell that have been topped with a rich sauce of butter, parsley and bread crumbs, then baked or broiled. Other seafood dishes guests can look forward to biting into include crab cakes and Morgan Mae’s take on shrimp and grits.

And don’t worry, if you’re not ready to dive in headfirst to seafood eats, there are also chicken and steak dishes for land lovers.

The resto is also set to host a full bar so you can have a dirty martini alongside your plate full of fresh oysters. Or maybe a shot of whiskey as some liquid courage if you’re just being introduced to the mollusk.

Upon opening, hours for Morgan Mae’s will be 11 a.m.-11 p.m. daily.
