One cocktail can morph into 10 or 20 by simply switching out the spirit or adding something to the simple syrup. The Pimm’s Cup is one such cocktail, and my current favorite — a perfect Florida summer quaff made of Pimm’s No.1, citrus, sweet, soda and a cucumber garnish. Fly Bar’s Danny Guess has a finger on the pulse of this classic. Keeping the basic formula in mind, Guess can lighten things up with cucumber soda or add complexity with a touch of vermouth. It’s a perfect platform for the bartender to adapt to the imbiber’s wishes. Whether you are just cocktail-curious or a diehard enthusiast, I think this is a must-try experience.
