Bokuchoi Ramen restaurateur brings first Japanese ramen restaurant to Tampa

Restaurateur Chung moon opened Tampa's first Japanese ramen restaurant at the University Mall.

Japanese ramen cooked at restaurants is quite different from instant noodles that most Americans are accustomed to eating and can take longer than 30 hours to cook. The ingredients vary widely depending on what Japanese region the ramen is based on. Bokuchoi Ramen dishes are made from scratch and Moon documents his process on his restaurant blog. Moon also serves curry and rice balls and hopes to introduce more menu items as business grows. Ramen-ya restaurants in Japan are extremely popular and American restaurants, such as Momofuku Noodle Bar in New York City, have proven a growing interest in restaurant-style ramen among U.S. diners.


Moon plans to bring a delivery service to the University of South Florida and surrounding hotels in the future so students can easily enjoy ramen on-campus and interact with the largely student-based community in the future. The menu is still being finalized, but should be completed soon.

Chung Moon's passion for authentic Japanese ramen has led to his launch of Bokuchoi Ramen this past August at the University Mall near the University of South Florida. Bokuchoi Ramen is the first Japanese ramen restaurant to open in Tampa Bay. Although Tampa has plenty of sushi restaurants, there are few restaurants where you can enjoy traditional Japanese cuisine.

Moon's interest in cooking began four years ago and since then he has practiced making ramen until he finally reached a skillful level of ramen cuisine. An MBA graduate from the University of Tampa and nine year Tampa resident, Bokuchoi Ramen is Moon's first restaurateur endeavor, inspired by ramen shops in New York City and a love of the hit Japanese animation show, Naruto. Moon documents his experiences on his Wordpress blog: bokuchoi. His reflections on running his first restaurant makes an interesting read for anyone interested in the restaurant industry or in opening their own restaurant one day.
