Chelsea Clinton goes 'green' with a vegan wedding menu

Former First Daughter, Chelsea Clinton, is set to tie the knot this week with her longtime friend and fiance, Marc Mezvinsky. The wedding will, of course, have the setting fit for a former President's daughter, being held at Astor Courts on the Hudson River in Rhinebeck, NY -- the palatial former home of American millionaire businessman John Jacob Astor IV (infamous for perishing during the sinking of the Titanic) built in the early 20th Century classical American style. The wedding will also have a personal touch by Chelsea: a "green" menu served at the reception, consisting of mostly vegan dishes, seeing as Ms. Clinton is a vegan herself.

Since she was a youngster in the White House, Chelsea has been opting for animal-free fare, even getting cooking lessons from the White House staff before she headed off to college.

The Vegetarian Star writes:

"Before Chelsea Clinton went off to Stanford, Hillary asked the White House cooking staff to teach her daughter how to prepare delicious vegan meals. But this was more than just a weekend of 'helpful hints'. Chelsea spent an entire six weeks learning the craft and upon completion, she received a Walter Scheib Cooking School certificate."

Carrying this lifestyle choice into her wedding festivities shows how committed she is about healthy eating and eco-friendliness. And it's her day -- why shouldn't she get what she wants?

To give the meat eating guests some compromise, the reception menu will have a beef option. Of course, it will be grass-fed organic beef.
