Homemade Pita Chips

Most families have some kind of special Holiday traditions. Some are passed down from generation to generation and some are newly created as we go along. These customs and rituals that we practice help define who we are as a family, and if we're lucky, create a unique opportunity for bonding.

My husband and I have been married for over twenty years, which is quite a miracle in this day and age, (especially since I am only twenty-nine years old). On our first Christmas together as man and wife, we began a tradition that we still observe to this day. Each year on Christmas morning, I put together a little champagne brunch for us to enjoy as we sit around opening our presents under the tree. It's just a special thing we do - just for us.

Between all of the cookie baking and preparation for the holiday feast, I try to keep the menu as uncomplicated as possible. The whole point is to have that time to relax and hang out before the hustle and bustle of the rest of the day begins. I'll usually stop by Morton's the day before and pick up some nice champagne and an assortment of cheeses, pâtés and their wonderful spreads. I serve them with a variety of different kinds of crackers, muffins and maybe even some scones.

Among our favorites vessels for scooping are my homemade pita chips. They are light, thin, delicate, impossibly crispy and definitely way better (and cheaper) than anything you can get out of a bag.  They're also ridiculously simple to make, and keep well for days if kept locked up tight in zip lock bags!

Another great feature of homemade pita chips is that you can flavor them in so many different ways. I always make some plain with just a little sprinkling of sea salt, and then jazz the rest up with seasonings like smoked paprika, cumin, garam masala, Parmesan cheese, herbs de provence or even some cinnamon and sugar. The possibilities are deliciously endless!

A big bag of fresh, homemade pita chips also makes a great gift alongside a jar of your favorite dip, spread or jam.

Homemade Pita Chips

For best results, use the best quality, authentic pita bread you can find for these. I usually pick mine up at a Middle Eastern specialty shop like Sahara or Oasis in Sarasota.   Keep unused chips sealed in a zip lock bag to retain freshness.

Ingredients:

6 large-sized pitas

Extra-virgin olive oil

Sea salt

Spices and herbs or other toppings of your choice

Directions:

1.  Preheat your oven to 350 degrees F.

2.  Cut each pita into 8 wedges. Open and split each wedge in two. You should get 16 thin wedges from each pita.

3.  Lay each wedge side by side on a baking sheet. Lightly brush each with olive oil and sprinkle with whatever toppings you're using.

4.  Bake for about 13-15 minutes, until the chips are lightly golden. don't let them get too dark. Remove and allow to cool before serving.

Makes 96 pita chips.
