An organically fun and delicious way to eat a salad

Sometimes when people think of salads, they automatically think "Borrrriiiinnng". And then when they hear the word "organic" they automatically think, "expensive!". Well it's true that some salads can be boring and it's also true that some organic foods can be a bit pricey. But in reality, you can make a fun organic blend salad that tastes amazing, isn't hefty on the wallet and is made within 5 minutes!

The secret to this success is finding a salad that interests your taste buds. With the various amounts of veggies, cheeses, meats, dressings, etc., available, you can probably make a different salad each day for the rest of your life and never have the same salad twice! 

When it comes to organic, Publix has a fantastic array of foods that have recently become closer to the regular items in terms of price. In Tampa, there is even a Greenwise Food Store in Hyde Park (Tampa) that specializes in organic and all natural products. With organic products more readily available and less expensive than ever before, going organic has never been so easy!

Now with the words "boring" and "expensive" out of way to making a salad, let's get down to business and make a yummy salad that can be done in a jiffy!

Organic Blend Fiesta Ensalada

(Yields one large dinner portion or 2-3 small appetizer portions)

1 bag Earthbound Farm's Organic Romaine Lettuce Hearts

1-2 tablespoons organic sour cream (regular, light, or fat free)

1-2 tablespoons organic taco sauce

1-2 tablespoons organic salsa (your flavor of choice)

1/2 cup free-range chicken, cooked

1/4 cup Organic Valley Mexican blend shredded cheese

1 handful Garden of Eatin' Chili and Lime Cantina chips, crushed

1. Take one and a half romaine lettuce hearts, rinse, dry and chop into medium to large sized bowl.

2. In a separate small bowl mix equal parts sour cream and taco sauce to desired amount. Set Aside.

3. In another small bowl, take the shredded chicken and microwave on high for 45 seconds. Cover.

4. Next, add 1-2 tablespoons of salsa on top of the lettuce. Take your sour cream and taco sauce mixture and dollop on top of the lettuce and salsa. Then take your cooked chicken and scoop on top of the salad and salsa. Sprinkle cheese to desired amount.

5. Take a nice sized handful of the chips and crush them on top of the salad.(Tip- you may or may not want to mix the salad all together to let the flavors meld. It's your choice. I prefer to mix.)

 Voila!! A salad that is delicious, quick and healthy! Now who ever said a salad is boring?
