David Miller of Savant opens Cities Restaurant in Clearwater tomorrow

I picked Vegas this month because it's not known for any specific food, so it gave me a lot of leeway. And it allowed me to do an elaborate chocolate and sugar deal. Next month I think I'll pick a fake city. Dr. Seuss? I tell you what, anyone who knows me, who's been in, knows that that's my sense of humor.


Miller does plan on focusing on real cities down the road, pairing a French city with Bastille Day or New Orleans with Mardi Gras. Of course, even those menus will be tinged with his playful style. And he'll still have his thumb on all the food served in both restaurants, since Cities and Savant are sharing a newly expanded kitchen. Cities will be able to seat up to 100 people and will take walk-ins, something the 20-seat Savant never did.


Cities is having an opening day party from 5:30-7 p.m. tomorrow night (Wed., April 1), with live music and passed food, followed immediately by a very busy night for Miller in the kitchen. "We have reservations on both sides at 7 p.m.," he explained, party or no party. "I blame that on computers."

I profiled David Miller of Savant Fine Dining for our $20 Menu Challenge last year and was utterly fascinated by his story: 27 years old (now 28), high school drop-out, culinary competition wiz, CIA grad, muscle car hobbyist, sugar expert and owner of two restaurants and a chocolate-making shop. Oh, wait, make that three restaurants.

Tomorrow, his Cities Restaurant (2551 Drew St., Clearwater, 727-421-9975) will open next door to his high-end, prix fixe Savant. The new restaurant (a la carte, not prix fixe) will feature a different city as its theme every month, with menus, artwork and everything else changing to match the mood of the new locale. Prices are still high-end, with entrees ranging from $22-36.
