Soon after moving to Tampa, I discovered a whole new world of Cuban food.
Tampa has a large Cuban community and their food is a staple in this town. Growing up, I had never heard of chicken and yellow rice, cafe con leche, deviled crabs, plantains, etc. I was missing out on a whole bunch of yummy food.
So if you are Cuban, I am sure this is not the authentic way to make Roast Pork with Black Beans and Yellow Rice, but my way still tastes damn good (and it tastes like the Cuban restaurants).

That does look delicious! I've been eating cuban food about every other week since I moved to Tampa. Every place I've been to has been pretty tasty.
Pork recipe is pretty standard, many variations depending on the family/restaurant. Black bean recipes vary, again depending on the family/restaurant. Great idea for the yellow rice. I will try it the next time I'm cooking yellow rice. By the way, yellow rice is for the "crackers" from Florida. Yellow rice was mainly used for Paella. The crackers didn't like eating the bland white rice and started to substitute the yellow for white. Restauranteurs picked up on it and the rest is history. Real Cuban families eat white rice with their meals. Just like Asians. Rice is the staple, everything around it is the side dish.
